Method

Dissolve the yeast in the lukewarm water. Mix in the flour and stir until the dough has come together. Now knead the dough lightly on a floured surface until it is smooth, put it in a big bowl, cover with a tea towel and leave in a warm place to rise for 1½ to 2 hours.

When ready to bake, preheat the oven to 220C/200C fan/gas mark 7. For best results, use a pizza/baking stone.

Cut the red onions into wedges, sauté for 2 minutes in a frying pan with thyme, salt and pepper.

Divide the dough in half and place on rye-floured work surface, now stretch or roll out into 2 round pizzas. Place the onions on top with the thyme and divide the goat cheese out into small dollops and end with brushing with a little melted butter. Use a pizza peel or paddle to lift pizza onto the baking stone dusted with plenty of cornmeal or polenta. If you do not have a baking/pizza stone, place the dough on a baking tray lined with parchment baking paper dusted with plenty of cornmeal/polenta.

Bake for 15-20 minutes or until golden brown.

Serve with fresh rocket on top.

Some people may shy away from the idea because they “do not like goat cheese”, but we want to challenge that notion. Goat cheese on pizza is smooth, satisfying and serves as a flavour enhancer for other toppings, so you get an impressively rich experience with lovely flavours and textures. Goat cheese has a unique and unrivalled flavour that you do not find in other ingredients. If you are not convinced, try it anyway to prove us wrong. It does not melt into the stretching strings as we know from, for example, mozzarella, but goat cheese on pizza does melt. It becomes smooth and even more creamy on the inside and a bit caramelised on the outside.

  • Onion is a popular ingredient in cooking. It adds a lot of flavour and can be led in various directions depending on what you want from it. In this recipe we use sautéed red onions. They have a strong but not overpowering flavour and the pop of colour makes the pizza even more tempting. By sautéing the red onions you get a softer texture, and the onions caramelise bringing out a rich flavour that is perfect with the tangy goat cheese.
  • Fresh rocket finishes off the pizza with goat cheese in the best way possible. The creaminess and softness from the goat cheese and the red onions benefit from a fresh crunch of rocket to balance it all out. It has a bit of a spicy and peppery flavour, which is why it is a perfect match for goat cheese and red onions on pizza. If you do not have rocket, you can also use spinach or baby spinach.
  • Soften and mix the goat cheese with seasoning before spreading it out on the dough to distribute the flavours evenly. Take your time when cutting the onions. Use a mandolin or a sharp knife to make the slices as thin as possible if you want a sweeter flavour. Cut the onions into wedges if you want them to keep their crunchiness and intense flavour. Go for a whole piece or log of goat cheese to crumble yourself. Pre-crumbled goat cheese is often harder to melt because of some anti-caking agents that are added to keep it from clumping. Mix some chilli with the goat cheese or the onions if you want to add some heat to the goat cheese pizza. Figs, basil, sage, rosemary, and mushrooms are all good additions to a goat cheese pizza, so experiment with different toppings to create your own version.

  • Thyme is good for many things including pizza. It tastes a bit earthy and lemony, which is often a good supplement to the baked pizza dough and the creamy cheese that most people put on their pizza. The thyme is particularly good in this recipe for pizza with goat cheese and red onion where it adds a refreshing spark to the creamy and sweet pizza.
  • If you have a log of goat cheese, you can crumble it into smaller pieces with your hands or a spoon. If it is too difficult, you can place the goat cheese in the freezer for a few minutes and then cut or break it into small pieces afterwards.
  • With its fresh, peppery flavour, rocket makes a good pizza topping. It adds bite and spices up the pizza.
