Method

In a medium saucepan, bring water to a gentle boil.

Gently lower the eggs into the water and cook for 6½ minutes to soft-boiled or longer, depending on how you like the yolk.

Remove from the saucepan and cool under the cold tap until cold enough to peel by hand.

Halve avocados and remove the stone and skin.

Mash the avocado in a mortar or with a fork, sprinkle with a bit of salt, and mash to your desired texture. Add chopped red chilli and lime juice to taste.

Toast the bread on both sides and butter generously.

Assemble by adding the smashed avocado onto the buttered bread and top with a warm egg sliced in half.
