Method

Gently sweat onions, garlic and aubergine in Lurpak® Plant Based for 15 minutes. Add spices and cook for a further 2 minutes.
TIP
Get the best flavour by sweating the vegetables right. This is a technique for the natural flavours and sweetness of the vegetables. Use low to medium heat to prevent the vegetables from browning or burning. Add Lurpak® Plant Based and let the vegetables cook slowly, stirring occasionally, for 10-15 minutes. You can cover the pan to help trap moisture and heat, speeding up the sweating process and keeping the vegetables tender. Adding a pinch of salt can help draw out moisture and enhance the flavours.

Add tomatoes and harissa. Cook for 25 minutes until it thickens and transforms into a rich, red colour.

Add chickpeas and continue to cook for 15 minutes. Add chard for the remaining 5 minutes.
TIP
For a luscious touch, add 1-2 tablespoons of Lurpak® Plant Based about 5 minutes before the end of the cooking time, when you add the shredded chard. This will melt into the stew, providing a richer flavour and a glossy finish.

Finish with parsley, mint, and dill and serve with crusty bread.
