Method

In a frying pan, dry fry the bacon from cold over low heat. Once the fat starts to release, raise the temperature and cook for 1-2 minutes on each side.
TIP
For a crispier result, toast the sandwich bread with butter. Spread butter on each side of the bread and toast them on a hot pan. Once golden flip them over and repeat.

Butter both bread slices. Top one bread slice with bacon. Cut tomatoes in half and scatter over the bacon. Sprinkle with basil leaves.
TIP
To save your bacon sandwich for later or store leftovers, wrap it tightly in aluminium foil or store it in an airtight container in the fridge until the next day. When ready to eat, reheat it in a toaster oven for even heating and crispy bread – or use a skillet over medium heat.

Season with salt and freshly ground black pepper. Top the sandwich with the other bread slice and enjoy immediately.
