Method

1
Preheat your oven to 170C/150C fan/gas mark 3.
2
Heat an oven-proof frying pan and add half the Lurpak® Plant Based. When it is bubbling, add garlic and cook for 1 minute, stirring continuously. Add onions and cook for a further 5 minutes.
TIP
The right pan is essential for a better frittata. It must be well-seasoned and oven-proof, as you do not want your frittata to stick.
The right pan is essential for a better frittata. It must be well-seasoned and oven-proof, as you do not want your frittata to stick.
3
Add the remaining Lurpak® Plant Based, broccoli, and water. Cook for 2-3 minutes more or until the broccoli is just tender. If the pan dries out, add another tbsp of water.
4
Pour in the egg mixture and tilt the pan so it distributes evenly. Cook for 2-3 minutes over medium heat or until the eggs have just set on the bottom. Sprinkle over flat-leaf parsley and Parmesan.
TIP
Get a perfectly cooked frittata with minimal effort in an air fryer. Preheat the air fryer for 3-5 minutes before adding the frittata mixture for the best result.
5
Transfer your pan to the oven for 25 minutes or until the frittata is firm and golden. Cut into wedges and serve with a green salad.
TIP
Let the frittata rest for a few minutes after removing it from the oven. This helps it set fully and makes it easier to cut it into neat wedges.

Questions about frittata

Following our straightforward recipe, you can easily make a delicious frittata with broccoli and red onion. But if you want to know more about it before getting started, find the answers to some common questions below.

  • You do not need to cover it when baking. If you do not put it in the oven, meaning you finish cooking it on the stove, you should cover the pan with a lid to allow it to bake on the stove. Baked in the oven, you do not need to cover it with a lid.
  • You need a 25-28 cm pan that can go in the oven as you start cooking the frittata on the stove and then transfer it directly to the oven. Transferring it to a plate before baking will ruin both its shape and the baking process. Choose the right pan to get the best result, preferably a non-stick pan or a well-greased cast iron pan. Ensure the pan is not too small, as it will make the frittata too thick and difficult to cook properly, resulting in a rubbery texture. Conversely, a too large pan will make the frittata flat like a pancake, which is not ideal either.
  • You can tell that it is done when the egg mix is almost set in the centre; it still must be a bit loose. If you give it too much, it can become rubbery and dense. After removing it from the oven, let it sit for a few minutes, which will finish baking the eggs while making sure it stays light and fluffy.

Cook up an easy broccoli frittata with red onion

Frittata is a breakfast and lunch staple in Italian cuisine. With Lurpak® Plant Based in hand, you get the best, most fluffy and tender frittata with broccoli and red onion. Frittata resembles an omelette, but it is cooked slowly and gently to give it its characteristic light and fluffy texture. Our recipe celebrates the harmony of simple ingredients that create a rich flavour profile, from mild savoury eggs and earthy broccoli to salty Parmesan and fresh parsley.

Perfectly fluffy frittata in the oven

Achieve the perfect frittata with gentle cooking in the oven. Starting on the stove and finishing it in the oven, it gets the characteristic light and fluffy texture. The even heat in the oven allows the eggs to set just right, resulting in a golden, slightly firm frittata with a tender centre. Enjoy it while still lukewarm from the oven, or serve it cold at picnics or as a quick and easy work lunch.

Fresh vegetables, salty Parmesan, and fresh herbs

The combination of fresh broccoli, caramelised red onions, salty Parmesan, and aromatic parsley makes this frittata truly special. Delight in the sweetness of red onions mixed with the fresh, earthy flavour of broccoli. Parmesan melts into the eggs, adding a savoury depth that is lightened by fresh parsley, adding both a pop of colour and a burst of herbaceous freshness.

Delicious for breakfast or lunch

Eggs for breakfast is a classic, and this frittata makes it even easier to start the day right. Simply fry the ingredients in a pan, pop it in the oven, and you have time to get ready for work, make a cup of coffee, or tackle your morning routine. Enjoy the frittata as it is or with a simple green salad for a light addition that adds a bit of crispness and freshness. For lunch, serve the frittata alongside a crisp, vibrant salad with your favourite vegetables, dressings, maybe a bit of onion and a sprinkle of cheese for a light yet satisfying midday meal.

Serve it for breakfast with a fruity, delicious breakfast muffin with a crumble topping on the side and a hot cup of coffee or tea. On a brunch table, it also pairs well with sweet brunch treats such as carrot cake with orange buttercream or banana walnut bread.

Make a frittata with your favourite vegetables

Experiment with the frittata ingredients and make something new every day. Try a potato frittata, which resembles a traditional Spanish tortilla, an omelette-style egg dish with potatoes. The potatoes add a slightly salty flavour and even some crispiness if you fry them with the garlic and onions in the pan.

Flavour the frittata further by adding fresh spinach, grilled asparagus, tender sweet potato, sautéed mushrooms, or roasted red peppers. Cheese such as cheddar, mozzarella, or goat cheese are deliciously flavourful, and you can also try salty chorizo, bacon or sautéed chicken.

Different herbs and spices make everything better. Try fresh thyme or basil for a refreshing and aromatic flavour that goes well with the parsley, or add a touch of Asian cuisine with coriander or mint. Smoked paprika or cayenne pepper can add a warm touch, enhancing the caramelised onions and savoury Parmesan.
