Method

Preheat oven to 200°C/180°C fan/gas mark 6.
Syrup

Place all ingredients in a small saucepan and bring slowly to a boil.

When the sugar is melted, lower the heat and simmer for 5 minutes or until the syrup thickens.

Take off the boil and leave the spices in for the flavour to infuse.
Kunafa

Mix the three cheeses in a large bowl and set aside.

Put the kataifi pastry into a large bowl and separate into strands. Add butter and massage it into the pastry until it is completely covered in the butter.

Add half the pastry to a frying pan and top with the cheese mixture, leaving a 1cm rim around the sides. Top with the remaining pastry.

Place the pan on low heat and cook for 2 minutes to give the pastry some colour, moving the pan continuously so it does not catch.

Carefully turn over the kunafa by placing a plate on top of the frying pan and flipping it. Put the kunafa back into the pan and cook on the other side for 2 minutes.
TIP
Before flipping the kunafa, run a spatula around the edges to loosen it. This makes it easier to flip onto a plate without breaking the pastry or disturbing the filling.

Place in the oven for 10-15 minutes or until golden and hot.

Remove from the oven and pour over the syrup.
To serve

Top with pistachios, prepared mango and dried rose petals and serve warm.
