Preheat a large, deep-sided pan with a lid over medium heat. Add half the Lurpak® butter and the garlic and cook for 2 minutes. Add the mussels, then shake the pan so they are covered in the garlic butter.
TIP
Tap any mussels that are open before cooking. If they do not close after a light tap, discard them as this indicates they are dead and not safe to eat. Similarly, after cooking, discard any that have not opened.

Place the lid on the pan and cook the mussels for 5 to 8 minutes or until they all have opened.
TIP
Make sure the lid is tight-fitting to keep the steam trapped inside the pan. This helps the mussels cook evenly and open up properly.

Remove from the heat and add the lemon zest, lemon juice, parsley, and remaining Lurpak® butter. Give the mussels a final shake and serve immediately with crusty French bread.
