Method

Beat eggs until well combined. Dissolve the cornflour in a small bowl with a tablespoon of water and mix it into the eggs with salt. Leave them to settle for 10 minutes.

To get the right flavour, control the heat when melting butter in the pan. Do not let it brown, as this will change the flavour as well as the colour of the tornado omelette. And you want that stunning yellow that beautifully complements the extraordinary shape. To get it, beat and mix the egg yolks and whites well, making the yellow bright and even, without any white stripes.
If you are serving more than one omelette, prepare the eggs you need before you start, preferably in different bowls so you use the right amount of egg mixture for each omelette. Also, make sure to gently melt a new batch of butter before cooking each omelette.

Melt butter in a non-stick frying pan. Pour in the egg mixture and wait 15 seconds for the bottom to set.

Get the chopsticks and drag two sides of the omelette into the centre. Keep the chopsticks still and with your other hand, turn the panhandle. This will twist the omelette into a tornado shape. Leave for another 30 seconds for the omelette to set. Let the top be a little runny, so the omelette will be soft when serving as it will continue to set after you remove it from the heat.
