Carbonara is a true classic, but there is nothing wrong with refreshing a classic tradition with a twist! In this recipe we make a vegetarian carbonara with kale and walnuts. Carbonara may sometimes feel heavy to some, but adding kale gives it a different balance. The kale is full of flavour and texture. And there is no need to worry, this does not mean that you have to say goodbye to the delicious creaminess – it comes from the eggs, and it is still there. After all, that is what makes a carbonara a carbonara.

Bring a large saucepan of salted water to the boil and boil the pasta for 9 minutes.

Meanwhile, chop the kale leaves medium fine. Lightly beat the eggs and mix them with the Parmesan.

Melt butter in a saucepan, add the walnuts and sauté for 2–3 minutes, add the garlic, sauté for 3-4 minutes more, make sure it doesn’t burn. Add the kale and sauté for 2 minutes, mix well, sprinkle with generous amounts of pepper. Turn off the heat and keep the mixture warm.

When the pasta is done, drain it, then return it to the saucepan and add kale and egg mixtures, fold the sauce into the pasta. Season to taste with salt and pepper.

Serve right away with more Parmesan.

  • Make sure that the eggs are room temperature when you add them as it will affect the consistency and the way they cook if they are too cold. To make sure that the eggs do not scramble when you add them to the warm pasta, you can slowly drizzle a bit of pasta water into the eggs while you whisk thoroughly to temper. Try adding a drizzle of lemon juice to freshen up the dish. Make sure that you use enough black pepper to create balance between the creamy and salty from butter and parmesan.
  • Our vegetarian carbonara is made with kale and walnuts. It has a bit of an autumn vibe, but you can make it all year round and adjust the vegetables to fit the season and your preferences. For example, add spinach or steamed broccoli for a more filling veggie carbonara. Or sautéed mushroom or courgette for extra softness and rich flavour. If you want crunch in every bite, add asparagus. Roast them for a few minutes in butter for maximum deliciousness and chop into smaller pieces so they are easy to eat. Food is as much about looks as it is about flavour, so why not add a bit of colour in the form of a kick from red onions or a subtle sweetness from cherry tomatoes? If you prefer a more savoury taste, you can use sun-dried tomatoes instead. It is called veggie carbonara for a reason, so suit yourself and add your favourite vegetables or whatever you have in your kitchen to create your own personal recipe filled with the flavours and textures you prefer.
  • Vegetarian carbonara is easy and delicious. Kale is a good choice for a veggie carbonara as it is filling and contributes with texture as well as flavour. But you can use any vegetables you like, for example, courgette, mushroom, onion, or broccoli. Boil the pasta in one saucepan while you prepare the carbonara in another.   • Carbonara with vegetables is very common. It is a nice rethinking of the traditional and popular spaghetti carbonara where you get a chance to fill your dinner with all your favourite vegetables without sacrificing the creamy deliciousness of the well-known carbonara.
  • In this recipe, we use kale, but you can add almost any vegetable you want to your vegetarian carbonara. For example, spinach, peas, mushroom, or tomatoes. It is all up to you and what you have in your kitchen.
  • If you have leftover veggie carbonara you can keep it in an airtight container in the fridge and reheat it in a saucepan or the microwave. If you want to add a bit of freshness to the leftovers, add fresh spinach or herbs when you reheat it.
