Lemon-parsley butter

Rub salt into the butter together with lemon zest and chopped parsley. Place the seasoned butter on cling film or baking paper.
TIP
Make sure the butter is at room temperature to make it easier to mix in the salt, lemon zest, and parsley.

Roll the film tightly around the butter to form a sausage shape. Put it in the fridge to cool.
TIP
Try to squeeze out as much air as possible when rolling the butter in cling film or baking paper to ensure it holds a tight, even shape. Chill the butter for at least an hour to make it firm enough to slice neatly.
Baked salmon

Preheat your oven to 200C/180C fan/gas mark 6.

Place the salmon in an ovenproof tray lined with tinfoil.

Cut your lemon-parsley butter into slices and place them on top of the salmon.

Bake at 200C/180C fan/gas mark 6 for 20 minutes until tender.

To serve, garnish the salmon with a little extra parsley and a few slices of lemon.
