Preheat your oven to 170C/150C fan/gas mark 3.

Heat an oven-proof frying pan and add half the Lurpak® Plant Based. When it is bubbling, add garlic and cook for 1 minute, stirring continuously. Add onions and cook for a further 5 minutes.

The right pan is essential for a better frittata. It must be well-seasoned and oven-proof, as you do not want your frittata to stick.

Add the remaining Lurpak® Plant Based, broccoli, and water. Cook for 2-3 minutes more or until the broccoli is just tender. If the pan dries out, add another tbsp of water.

Pour in the egg mixture and tilt the pan so it distributes evenly. Cook for 2-3 minutes over medium heat or until the eggs have just set on the bottom. Sprinkle over flat-leaf parsley and Parmesan.
TIP
Get a perfectly cooked frittata with minimal effort in an air fryer. Preheat the air fryer for 3-5 minutes before adding the frittata mixture for the best result.

Transfer your pan to the oven for 25 minutes or until the frittata is firm and golden. Cut into wedges and serve with a green salad.
TIP
Let the frittata rest for a few minutes after removing it from the oven. This helps it set fully and makes it easier to cut it into neat wedges.
