Method

Crust mix

Remove the leaves of the tarragon stems and chop roughly.

In a medium-sized bowl, mix butter with tarragon, lemon zest, cumin, garlic, spring onions, breadcrumbs, salt, and pepper.

Spread the crust mix on the lamb racks and place back in the refrigerator for half an hour for the butter to set before roasting. 
Vegetables

Cut turnips into wedges and carrots in half and then again in half lengthways. Cut spring onions into 2-3-cm pieces.

Melt butter in a frying pan and add vegetables and tarragon. Mix well and let it roast for a few minutes. Season with salt and pepper and place in a roasting pan. 
Lamb rack

175C/155C fan/gas mark 4​. ​Place lamb racks on top of the vegetables and roast in the oven for 20 minutes.

When done, cut the lamb into cutlets, leaving the bone on. Serve on top of the vegetables, and make sure any fallen-off crust is sprinkled back onto the lamb.

Sprinkle lemon juice over vegetables and meat and serve right away.

Cooking a rack of lamb – temperature and time is key

If you want soft, tender meat, it is important not to overcook the lamb racks. The exact cooking time depends on how you want the meat, and there can also be slight differences from oven to oven, so you should always keep an eye on it as it cooks. In general, you should aim for about 15 minutes for medium-rare (internal temperature of 57-60°C) and about 30 minutes for medium (internal temperature of 63-71°C). Check the internal temperature regularly with a meat thermometer.

Greatness comes with the right crust

By spreading a crust mixture on the lamb racks before cooking, you infuse the lovely lamb with even more flavours and subtleties. Delicate liquorice-like notes of tarragon and warm and nutty notes of cumin add depth to the crust, while spring onions provide a touch of freshness, and garlic contributes a pungent, aromatic flavour. And let’s not forget the tangy lemon zest, contrasting the other ingredients’ richness and earthy notes. Last but not least, a generous amount of butter binds everything together and adds a rich and creamy flavour that will take the lamb racks to new heights. So, crown the racks with a crackling crust and enjoy a complex and well-balanced flavour profile.

A bed of tasty vegetables

To complete the meal and make the lamb shine, you need the perfect side – in this case, not placed to the side, but beneath the meat. Carrots, turnips, and spring onions form the base for the tender lamb, ensuring an enticing combination of flavours and textures. Sprigs of tarragon add a pungent, liquorice-like taste, and butter enhances all the flavours while caramelising the vegetables. The result is a rich, crunchy base for the rack of lamb to be served on.

Instead of tarragon, you can use, for example, thyme or ramson to add different flavour notes.
