Method

1
Season shrimp with the spices.
2
In a pan over medium-high heat, melt butter and cook the shrimp for 6-7 minutes until cooked through, flipping them halfway through. Set aside.
TIP
Cooking the shrimp in butter ensures a juicy and tender shrimp with a rich flavour. The cooking time can vary depending on the type and size of shrimp you use. When they change colour to pink on both sides, they are done.
3
In a non-stick pan, melt butter and cook eggs, stirring until scrambled and done. Season with salt and pepper and set aside.
TIP
When making scrambled eggs, cook them over low to medium heat. This way, they have time to cook without becoming dense and overcooked. Scramble the eggs into medium-sized bites that meld well with the other ingredients in the dish.
4
Add butter to the pan used to cook the shrimp and sauté onion, garlic, and ginger.
5
Add vegetables and cook for 7 minutes. Season with salt and pepper.
TIP
You can use fresh vegetables instead of frozen vegetables – a good way to clean out the fridge. They might need a bit longer cooking time.
6
Add rice. Cook for another 2 minutes, then add the cooked eggs and shrimp.
TIP
Leftover rice is great for making fried rice. It is drier and firmer than freshly cooked rice, which prevents the dish from becoming soggy and gives it the characteristic bite.
7
Add soy sauce. Cook for another minute and remove from the heat.
8
Place your fried rice on a platter and garnish with spring onions.
Good Food doesn’t have to be perfect. But was this a winning recipe for you, cook?
